ClickToFlash
Prevents ANY Adobe Flash content from loading in Safari until you actually click to request it. I used this on my MacBook Air for ages because Flash-based sites were constantly causing it's fan to kick in. Surfing the web soon became gloriously pleasant without all the Flash-based distractions. Now I use it on my all my other Macs.

Automatic off-site backup solution. No monthly fees necessary; instead, you can use a friend's computer as a backup target. Been using it without ANY issues since beginning of April 2009. The free ad-supported version backs up once a day whereas the $60 (one-time cost, not annual) version can do incremental backups as needed. (compare CrashPlan editions )

Delicious Library
Uses the webcam built into my Mac to scan the code on books, cds, dvds etc - consults amazon's online database of products and catalogs the item with a photo of the product and all its pertinent information. For a short time there was also an iPhone version so you could sync your library to your iPhone; however, Amazon changed it's API's usage policy and the app was pulled from the App Store.

DEVONthink Pro Office
Personal document management software. Stores web clippings, all QuickLook-supported file formats and more and works VERY well with my Fujitsu ScanSnap S1500 scanner.

Flip4Mac WMV Player Pro
This application lets you import Windows Media video and audio into QuickTime Pro, iMovie or any Final Cut application so you can play it or convert it to a more useful format. In order to export to WMV you have to buy the Studio edition of Flip4Mac - but why the hell would you want to do that in 2009, when none of the major devices can even play WMV (cos H264 is superior in every way...)?

Switcheroo
Adds a Windows Task Bar to your Mac; whereas the Dock uses icons, the Taskbar uses words. Glancing at the Taskbar, in one step I process the information and click the desired application name. Glancing at the Dock, I have to do the same in two steps: remember what the icons symbolize, then select the one I want. The TaskBar gets me there much faster. Either I'm dimwitted or there's actually more 'mental' processing going on when dealing with the Dock. Maybe they both amount to the same thing.

TextWrangler
ASCII text editor meant for programmers but since its early days as BBEdit Lite I’ve used it to work magic on text; removing formatting before posting text to the web or inserting into QuarkXPress/eReader Studio.
